1/2 kg prawns, cleaned and deveined.

3 medium sized onions - finely chopped

6 green chillies - slit into two

Around 20 curry leaves

Take a coconut and cut it open, you can drink the coconut water if you like, it is very good for health, and cut the coconut into small pieces. 

 

Pressure cook the prawns with 1tsp red chilli pwd, 1/4 tsp tumeric/haldi pwd, salt and water. Give it just a whistle. When the cooker is ready to open, open it and drain out the water.

Nadan Prawn Fry

In a frying pan/kadai, take 1 tsp sunflower oil, when it heats up on medium flame, add 1/2 tsp rai/mustard seeds.

When it splutters, add the opnions, green chillies and curry leaves. Fry it till it is brown in colour.

Then add 1/2 tsp corriander/dhania pwd, 1/2 tsp red chilli pwd, 1/4 tsp tumeric/haldi pwd, 1 tsp ginger and garlic paste and fry for 3-4 mins.

Add the cut coconut pieces and give it a good stir, till the coconut pieces are coated with the masalas.

​Add the prawns and 1 tsp of black pepper pwd, and stir well, and simmer for 4-5 mins.

Add the juice of 1/2 a lemon, give it a good stir, and switch of the gas. Tastes best with Kerala Parothas.
